Commitments
On this page we publish our statements on the Environment, Sustainability, Diversity and Inclusion. We published them in November 2019 and in November 2021 we will release an update.
We recognise that our activities have an impact on the environment arising from our consumption of raw materials, energy and water and from our generation of waste and emissions to land, air and water. We are constantly reviewing our practices and innovating ways to further reduce our ecological footprint, and to contribute to a healthy community within which to live and work.
Therefore, we make very deliberate and conscious choices about how we source, prepare and serve the food and drinks in our restaurants. We also make deliberate, conscious decisions on how we operate.
Our practices:
• Our delivery is 100% compostable;
• We recycle 100% of our cardboard, paper, cooking oil;
• We include water efficient dishwashers and energy efficient equipment when purchasing new appliances;
• We return all cardboard, wooden packaging, glass bottles to our suppliers so that they can reuse it;
• We support local events in the area, so far in 2019 we supported 5*
Commitments for the future:
• We plan to reduce paper consumption by providing digital menus
• We plan to switch to LED lighting and smart meters in all our production kitchens and offices to reduce the environmental impact of our business
• We plan to change all cleaning products to environmentally friendly cleaning products and 100% recycled, biodegradable paper towels

Our team members and guests are diverse in gender, race, ethnicity, sexual orientation, disability, religion, age, cultural background and life experiences. We celebrate these differences and cultivate an environment where individual strengths and stories are respected and valued.

• We aim at better understand diversity, inclusion, and equity to ensure the well-being of our staff, our members and the communities we serve;
• We offer a range of dishes suitable for vegetarians and vegans and those with special dietary needs, these are clearly marked on the menu.

• We favour organic food and bio-dynamic wines;
• We change our menus every trimester to incorporate seasonal produce;
• Every day we have at least two “Plats do jour” to reduce waste;
• We cook all our food from scratch with fresh ingredients so we know exactly what is in our food;
• We offer a range of dishes suitable for vegetarians and vegans and those with special dietary needs, these are clearly marked on the menu;
• We promote meat free eating, offering customers more plant protein based recipes;
• We do not serve industrial energy drinks.
Commitments for the future:
• We will start a regular workshops for staff and clients with a nutritionist;
• We plan to start measuring food waste;
• We plan to have infused tap water available for customers and team members.
